Recipe of the Month: Quinoa Salad with Grilled Vegetables

This quinoa salad is a perfect example of a balanced meal that provides complex carbohydrates, healthy fats, and essential nutrients. It's great for lunch or as a side dish for dinner. The combination of grilled vegetables adds a smoky flavor that enhances the overall taste of the dish.


Ingredients:


  • 1 cup quinoa
  • 2 cups water
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil leaves for garnish


Instructions:


  1. Rinse the quinoa under cold water.
  2. In a medium saucepan, bring 2 cups of water to a boil.
  3. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the water is absorbed.
  4. Fluff with a fork and let it cool.
  5. Preheat your grill to medium-high heat.
  6. Toss the sliced bell peppers, zucchini, and red onion with 1 tablespoon of olive oil, garlic powder, salt, and pepper.
  7. Grill the vegetables for about 5-7 minutes per side or until they are tender and have nice grill marks.
  8. In a large bowl, combine the cooked quinoa, grilled vegetables, and cherry tomatoes.
  9. Drizzle with the remaining olive oil and balsamic vinegar.
  10. Toss gently to combine and season with additional salt and pepper if needed.
  11. Garnish with fresh basil leaves.
