Grilled Chicken with Quinoa and Roasted Vegetables

Ingredients



  • 2 boneless, skinless chicken breasts
  • 1 cup quinoa
  • 2 cups low-sodium chicken broth
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions


  1. Preheat your grill to medium-high heat.
  2. In a medium saucepan, bring the chicken broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes or until the quinoa is cooked and the liquid is absorbed.
  3. While the quinoa is cooking, toss the sliced vegetables with olive oil, garlic powder, paprika, salt, and pepper.
  4. Grill the chicken breasts for 6-7 minutes on each side or until fully cooked. Remove from the grill and let them rest for a few minutes before slicing.
  5. Grill the vegetables for 4-5 minutes on each side or until tender and slightly charred.
  6. Serve the grilled chicken over a bed of quinoa, with roasted vegetables on the side. Garnish with fresh parsley.
