Sweet Potato and Black Bean Tacos: A Delicious and Healthy Recipe

This Sweet Potato and Black Bean Tacos recipe is an excellent way to enjoy a wholesome, plant-based meal that’s both tasty and nutritious. The combination of roasted sweet potatoes, black beans, fresh vegetables, and warm tortillas creates a delightful and satisfying dish.


Ingredients:


  • 2 large sweet potatoes, peeled and diced
  • 1 can black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 red onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1/4 cup cilantro, chopped
  • 1 lime, cut into wedges


Instructions:


  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the diced sweet potatoes, red bell pepper, and red onion with olive oil, chili powder, cumin, smoked paprika, salt, and pepper.
  3. Spread the mixture evenly on a baking sheet and roast for 25-30 minutes, or until the sweet potatoes are tender and lightly browned.
  4. In a medium saucepan, heat the black beans over medium heat until warmed through.
  5. Warm the corn tortillas in a dry skillet over medium heat, about 1 minute per side.
  6. Assemble the tacos by filling each tortilla with the roasted sweet potato mixture and black beans.
  7. Top with chopped cilantro and a squeeze of lime juice.
