Winter Detox Quinoa Salad


A Healthy Start to the New Year


Kick off January 2025 with a refreshing and nutritious Winter Detox Quinoa Salad! This salad is packed with nutrient-dense ingredients to help cleanse your body, boost your energy, and keep you feeling your best. Perfect for a light lunch or a side dish during your New Year’s reset!


Ingredients


  • 1 cup cooked quinoa
  • 2 cups baby spinach, chopped
  • 1/2 cup shredded purple cabbage
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup shredded carrots
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup dried cranberries
  • 1/2 avocado, diced
  • For the dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste


Instructions


  1. In a large salad bowl, combine the cooked quinoa, baby spinach, purple cabbage, cherry tomatoes, carrots, toasted almonds, dried cranberries, and avocado.
  2. In a small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, honey, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad and toss until all ingredients are well-coated.
  4. Serve immediately and enjoy this refreshing, detoxifying salad!
